I'm going to teach you some basic coffee-making skills. Alright, I'm going to show you how to steam milk with an espresso machine. The wonderful thing about espresso is that besides just a straight shot and an Americano, there's a multitude of milk drinks you can make. But first you have to know how to steam it right, which is a little bit tricky. So this is the steam wand, and this turns it on. Some machines will have a button that you push, or a level that you pull, this one is a knob that rotates. You want to start out with high quality whole milk that's cold as well as a pitcher that's also cold. So we have that in there. Now there's a few motions that you're going to want to go through when doing this. The first is to submerge the tip of the steam wand just below the surface of the milk. Start off with the pitcher straight up, and then angle it, this way when you turn it on you'll create a whirlpool. The first thing you do when you turn it on is let a little bit of air in, but you only want to do this for a few seconds, otherwise you'll end up scorching the milk. Once you've let the air in, you sink the tip of the wand in and just let it whirlpool until it gets to the correct temperature. So now I'm going to steam this and show you how it should look. The first thing you always want to do is purge. There can be buildup of milk or water in the tip and you don't want that going into the milk. Alright, so again, I'm just going to let some air in. It's going to make a slight hissing sound, and then I'm going to make a whirlpool. Then again, always purge afterwards to get that milk out of there. So once you've steamed it, you can give it a couple knocks. You'll see that there's just a few bubbles in there. And then swirl it around to incorporate all that foam you just made. You'll see it's nice and glossy. This is called micro foam. If you see too many spidery bubbles, that means that you've either let too much air in, or not enough. Alright, that's perfect. And that's how you steam milk.

It's important to realize, first of all, that you don't steam milk any differently for latte art than you would to make a really good beverage. Again, I'm not a latte artist, I'm a barista. So, our predominant focus and our number one goal here is to make a delicious drink for our customer. So, you could view this as how to properly steam milk, period, instead of for latte art. First thing you want to do is to get some delicious, cold milk right out of the refrigerator, as cold as you can get it without it having been frozen. And you want to pour to just under the spout in the pitcher you're using. If you find that you have a lot of milk left over after a latte art pour, then you want to use less milk next time. Keeping your waste down is a really important step. So, if you find yourself having to pour out milk in the beginning before you pour or you have a lot of milk waste afterwards, that's a cue for you just to use less in the first place. So, for me, for the cups we're using, I know I need to use milk that is just under the spout here. It's about six ounces of milk, and that's what we're going to wind up with at the end here. It's a six ounce beverage. All right, so now that we have our milk in our pitcher, I'm going to throw this guy back in the refrigerator to keep it cold. And then I'd bring it over to the espresso machine. So, the first thing that we're gong to do is purge the wand of any condensation that's built up before we got here. So, get all that water out. And you can do that into a rag if you don't want to get yourself all wet. Then I'm going to position the steam wand in the pitcher just slightly off-center so that it'll push the milk in a whirlpool in the center of the pitcher. What this is going to do is help the larger bubbles to break down and it'll give you control over the aeration process. Aeration is adding air to the milk to create the foam we're looking for. So, I'm going to turn the wand all the way on and I'm only going to push air into the milk for the first couple seconds of this heating process, about until a hundred degrees. That sound should sound like paper tearing or like a chirping sound, and not like bubbles being blown in. That means you're aerating finely enough to get very finely textured milk. So, it looks like this. Turn the steam wand on. There's that sound. Now, I'm going to stop. And then when the milk is too hot to touch, we're going to turn the steam wand off. First thing we do after we're finished steaming is wipe the wand of any milk. Purge milk out of the steam wand. And then we can look at our milk. Once we're here, we can pop out any visible bubbles by giving it a tap on the counter. And then giving it a swirl to polish up the surface. Now, the goal here is to wind up with milk that looks like wet paint or marshmallow fluff. If you can see any visible bubbles in the milk, you need to start over because it's not quite as good as we want it to be. The thing we're looking for here is called microfoam, which means it's a very thick layer of gooey looking foam that's going to pour really nicely. So, it should look like this really finely textured, sort of gooey thing. And that's how you properly texture milk.

How to Froth & Foam Milk Without an Espresso Machine or Steam | 4 Ways

We show you four ways to make frothy milk foam for your coffee without an espresso machine. We'll be using a whisk, a french press, a milk frothing wand, and a jar. But before we get started, let's talk about the difference between *steamed milk*, and milk foam. Steamed milk is what's most commonly made with higher-end espresso machines. This produces tiny, closely-knit bubbles and is similar in consistency to thick paint. It's used to create the lovely latte art seen at your favorite cafe. Milk foam (or frothed milk) is slightly different. It's the fluffy, pillowy goodness that typically tops cappuccinos. Since it has an airier, fluffier consistency, it is not used for latte art. I understand there are slight differences between "foam" and "froth", but for the purposes of this video, I'm using them interchangeably. While steamed milk typically requires a steam wand, we can produce pretty-good milk foam using household tools. Today I'll be covering four of my favorites. 1. Whisk & Stovetop: This produces very light, airy pillows. 2. French Press: My favorite method, this produces rich, velvety, creamy pillows that are more dense than the other methods. 3. Frothing Wand: This method produces a feather-light foam with less structure and stability than other methods. 4. Jar Method: Produces a smooth, more fluid froth. For each of these methods, you'll notice that some milk almost always remains unfrothed. This is perfectly normal. Pour the liquid milk in your drink first, then spoon the foam on top. Enjoy! I'm filling the mason jar a quarter way up with milk. I'll close it and give it a good shake for 30 seconds. Then all I do now is remove the lid and put it in the microwave for another minute. This warms the milk and stabilizes the foam. Once it's done it's ready to be added to your coffee. The second way is using a French coffee press. I'm adding warm milk, about a quarter-way up and then I'll take the plunger and pump it up and down gently for about a minute. The milk will froth up right before your eyes. What you're doing here is incorporating air to create these tiny little bubbles. The third way is this nifty frothing wand. You stick the tip of the wand in your warm milk, press a button, and in literally 15 seconds you have a glass of perfectly creamy, decadent foam. Clean up is easy, it's portable, and it's a lot cheaper than one of those fancy machines. My favorite method is the using the french press. It creates the most voluminous and stable foam. How to steam milk walk-through video This video focuses on how to steam your milk, developing a creamy delicious velvet smooth milk for a cappuccino, flat white or late. Coffee machine: Rancilio Silvia your host: James | Bay Beans coffee If you would like more info, contact us for free advice. Before you begin, ensure to read your machine's instruction guide for optimum results. Turn the steam wand on for approximately 3 seconds to clear the valve of any excess moisture, turn steam off. Fill 1/3 of your milk jug with cold fresh milk. (Try keeping your milk jug in the fridge). Place the tip of the wand approximately 1-2 cms below the milk surface and turn the steam on full. Slowly lower the jug until the wand is just breaking the surface of the milk. After approx 20 seconds, the milk will get to 35c, (which you will know by feeling the side of the container to match you body temp). Submerge the wand below the surface and hold the jug on a 45 degree angle, creating a whirlpool effect in the milk. Allow the milk to heat to 68-72 degrees. (You should be able to touch the base of the jug but not leave your hand there). Wipe the steam wand with a damp cloth after every use. Allow the milk jug to sit for 1 minute before pouring into your coffee. Hold the froth back in your pour to create a flat white, or add froth for a cappuccino. Get creative if you want by adding some latte art - quite a skill.

I'm going to teach you some basic coffee-making skills. Alright, I'm going to talk to you about latte art. Latte art is kind of the exciting part of making espresso drink. It's what gets a lot of people really pumped about making coffee. It's not necessarily a representation of a quality beverage, but it definitely shows that the person who made it cared—it's the mark of a professional, similar to plating with food. Now, the first thing you need is a good shot of espresso. You need the milk steamed properly with good micro foam, and then you have to pour, keeping a few things in mind. This is velocity, so basically how fast you're pouring. And then where the milk is going in the cup, and where it's flowing outwards. It's kind of something you have to feel out and you really have to practice it many many times to get down. So we're going to start off by doing the heart. This is sort of the basic latte art design and then the other one would be a rosetta which is a fern, and then a tulip. So heart, rosetta, tulip are the three basic designs you can do with latte art. So I'm going to start off making the heart, pulling a shot, steaming the milk and then pouring. Alright, so when you're starting to pour latte art, the first thing you want to do is pour from a greater distance up, or from a greater height so that way the milk is actually going to go underneath the espresso and then as you get closer and start pouring faster, the foam rises to the top and this is when you start controlling it. So to make the heart, you're basically just going to be pouring into the center until you see it's about three-quarters full. So I'm pouring into the center there. Then as I get closer, the foam will rise to the top and you just kind of shake it, and then you lift it up at the end to suck it in and cut through. So again, pouring to the center, getting close when it's three-quarters full, pulling up to suck in and then cutting through. That's a heart.

Review: Wet & Dry Cappuccino Milk Type - WET: Ok to use whole milk, but I recommend 2% or fat free milk. DRY: 2% or fat free only Technique - Begin Frothing immediately and continue to froth until target tempurature. (140 F) Tips - Make sure you begin steaming your milk with your steam wand positioned high enough to allow the tip of the steam want to rise all the way to the top of your milk pitcher while frothing. Make sure to always taste your frothed milk by itself without espresso to determine proper temperature, mouth feel and volume.
